Shrimp & White Bean Cilantro Burgers

I have come up with a great idea to making dinners faster during the week. Of course, I’m not the first person to think of this but it was the first time I had done it and boy does it cut down on your dinner prep time. What I did was prep the grains and the beans needed for this recipe (and some extra to freeze for later use) the night before.

I cooked the wild rice & quinoa, some for the recipe and some extra for later use, then placed it in the freezer until it was needed. I also simmered the dried beans for an hour until they were softened and did the same thing, placing them in the freezer until I needed them. I’m sure putting them in the refrigerator would work just as well! Then, all I had to do for this dinner was throw it all together and bake for 10 minutes! Perfect!

Cashew & Lentil Curried Burgers

Anyone into veggie burgers? Do you like coming up with new veggie burger creations? I get so excited when I made a veggie burger that stays together, tastes yummy, and has the right consistency and texture when eating. Those three things are the most important to me when making vegetable burgers. When I made these cashew curried burgers, I could tell they would be a hit as soon as I starting forming them into patties. Corn & Black Bean Burgers

Yay! It’s Friday and I’m sure everyone has worked hard to get to this day. I know I sure have. Last night I did a long workout on the treadmill, which was dreadful while I was running it, but afterwards I felt like a champ. I talked about getting through workouts on the treadmill before and I used some of these tips yesterday. What are your ways of crushing a workout on the treadmill? Anyway, I also made these corn & black bean burgers, which are so easy to make and delicious. They are meant to be vegan, but I feel like an egg white would help to hold them together so that’s what I did. You could do a flax egg and then they truly would be vegan. Read on for the recipe…

Corn & Black Bean Burgers

Ingredients:

Adapted from Eating Well

  • 1 can black beans, rinsed/drained
  • 1/2 tsp cumin
  • 1/4 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 cup frozen corn, thawed
  • 1/2 cup bread crumbs, divided
  • 1 egg white
  • 1 tomato, diced
  • 1 green onions, diced
  • 1/4 cup cilantro
  • 2 Tbsp olive oil

Directions:

  1. Mash black beans and spices (cumin, paprika and chili powder) together with potato masher.
  2. Stir corn and 1/4 cup bread crumbs in bean mixture.
  3. Add egg white and mix together well with hands.
  4. In a small bowl, combine tomato, green onion, cilantro and 1 Tbsp olive oil.
  5. Combine tomato mixture with black bean mixture.
  6. In small bowl, mix together remaining Tbsp olive oil and remaining bread crumbs.
  7. Create 6 small black bean patties.
  8. Brush tops of patties with breadcrumb/olive oil.
  9. Bake at 425F for 10 minutes, flip and cook 10 more minutes or until golden brown.
  10. Top with creamy avocado, tomatoes and ENJOY!
