brussels sprouts & apple cider

I never used to like brussels sprouts, but as I grew older they grew on me. Just like many things in this world. Making these sweet and savory brussels sprouts doesn’t take much. The apple cider in the mix caramelizes the sprouts and gives a sweet flavor.

Apple Cider Brussel Sprouts

Servings size: 1 to 2 side dishes

Ingredients:

  • 10 brussels sprouts, ends chopped
  • 1 medium apple chopped (small cubes)
  • 1/4 cup to 1/2 cup apple cider (depending upon your sweetness liking)
  • 1/4 cup or more water
  • sprinkle of dried cranberries or raisins

Directions:

  1. Cut ends off brussels sprouts and cut in half lengthwise.
  2. Place brussels sprouts and chopped apple cubes in apple cider and water in sauce pan on medium high heat.
  3. Let brussels sprouts boil in liquid for 12 to 15 minutes or until desired softness (if liquid dissolves, add more water/apple cider)
  4. Liquid will burn off and sprouts will begin to caramelize. When sprouts are browned, remove from pan.
  5. Sprinkle with cranberries.
  6. ENJOY!

 

Eggplant & Chicpea Stew

We received a crock pot as a wedding gift and I want to use it all winter long. There is something about placing ingredients into a big vat, turning on the heat, going to work and coming home to a finished product. I love it! Tonight’s dinner on the menu: eggplant & chicpea stew. The stew will be placed over a grain of choice, not sure what that will be, maybe quinoa.

Ingredients:

  • 1 28 ounce can diced tomatoes
  • 1 cup dried chic peas (boiled for 2 minutes, covered and soaked over night)
  • 2 large eggplants, peeled and diced
  • 1 package white mushrooms sliced
  • 2 medium onions diced
  • 3 cloves minced garlic
  • 1 cup water
  • 1 cup vegetable stock
  • 1/2 tsp cinnamon
  • 1 bay leaf
  • 1 tsp parsley

Directions:

  • Place all ingredients, mixed well, in crock pot on low setting for 8 hours.
  •  When chic peas are softened, stew is ready!
  • Serve over rice, quinoa, bed of sautéed spinach
  • ENJOY!
