Champagne Mint Mojitos

I really fell in love with mojitos this summer. I enjoy the fresh mint that makes this drink refreshing and also makes you feel like you are putting something healthy into your body while putting down a few ounces of liquor. A little mint, a little liquor, perfect! I had a few bottles of champagne left over from the wedding – crazy, huh? – and pulled them out from the back of the pantry to use for this drink. The blush champagne really perked up the mojito giving it a nice color effect. Who doesn’t love a little pink tint to their mojito?

Champagne Mint Mojitos

Serving: 1 drink – double, triple for a good night

Ingredients:

  • 1 Tbsp mint
  • 1/2 tsp sugar
  • 1 tsp lemon or lime juice
  • 2 ounces light rum
  • 4 ounces champagne
  • 2 ounces seltzer water

Directions:

  1. Muddle mint, sugar and lemon/lime juice in bottom of glass until mint is broken apart.
  2. Add rum, champagne and seltzer.
  3. Stir well and ENJOY!
