Here in our household, peanut butter and almond butter are like gold. We have espresso spoons (they are mini little things) and we use those for all the gold diggin’ in the jars. Joe and I both stand at the island with the peanut or almond butter in hand and we dig and dig away. Usually there is silence between the two of us because really no words are needed. It is actually kinda funny to use such a small spoon to eat something so delicious, but I guess that’s what keeps us coming back for more!
I decided that trying to make our own almond butter would be fun, especially since I know how much of a hot commodity it is in the house. Read on for the recipe…
Sweet & Salty Almond Butter
Ingredients:
- 1 cup unsalted, roasted almonds
- 1/2 tsp salt
- 1 Tbsp honey
Directions:
- Place almonds in food processor and allow nuts to go through number of different stages: meal, coarse meal, small balls, finally almond paste (aka the gold) – allow a few minutes.
- Scrap from food processor, add salt and honey mixing well.
- ENJOY immediately with a small espresso spoon or a large soup spoon!
