Have you been on the hunt for the perfect granola bar recipe? I definitely have and I find it so hard to make granola bars with the right consistency. You want them chewy and crunchy all at the same time. Getting this consistency can be tough. When I made these granola cups they were very crunchy. They were tasty, but again they didn’t give both the two textures I was looking for this time around. That’s when I found a recipe from Eating Well – go figure and decided to whip it up in the kitchen.
Snack Bars
Lightly adapted from Eating Well
Serving size: 16 bars
Ingredients:
- 2 and 1/4 cup puffed wheat cereal
- 1/4 cup pecan pieces
- 1/4 cup raw cashews
- 1/4 cup sunflower seeds
- 1/4 cup dried cranberries
- 1 Tbsp flax seeds
- 1 Tbsp sesame seeds
- 1/2 cup honey
- 1/2 tsp vanilla
- 1/2 cup chocolate chips
Directions:
- In a large bowl, mix together cereal, pecans, sunflower seeds, cranberries, flax seeds and sesame seeds.
- In sauce pan, on medium heat, warm honey and vanilla.
- Pour honey mixture over cereal mixture and coat well with spatula.
- Let cool for 5 minutes.
- Fold in chocolate chips.
- With back of spatula, press cereal and honey mixture into 9 inch greased glass casserole dish.
- Bake 300F for 15 minutes – watch top doesn’t burn.
- Let cool, cut into squares.
