I like baked brie and was in the mood for it tonight for dinner. I have made a baked brie appetizer before where I wrapped it in crescent rolls and baked it for 40 minutes or so and served it with crackers and apples. Tonight, I wanted something a bit lighter and found a recipe online about parmesan brie. It was really, really easy. The recipe was nice and light and was perfect to eat alongside a salad.

Ingredients:

1 round brie cheese
-
1 egg
-
1 Tbsp water
-
1/2 cup seasoned bread crumbs

1/4 cup shredded parmesan cheese
-
1 Tbsp dried cranberries
-
1 Tbsp chopped walnuts
-
flat bread, crackers, fruit to serve with brie
Directions:

Cut brie into small rectangular pieces – cut into quarters first, then slice each quarter into rectangular pieces.

Whisk egg and water together.

Dip brie pieces in egg wash, then cheese and finally bread crumbs – coat evenly.

In saute pan, on medium heat, place brie pieces.

Carefully cook 1 to 2 minutes on each side – don’t overcook or cheese will melt.

Sprinkle baked brie with cranberries and walnuts.

Serve with toasted flat bread, crackers or fruit.
