I had a light bulb go on in my head about bbq sandwiches this week. Instead of using meat, use tempeh! It worked so well and tasted delicious and I know because Joe loved it and took the leftovers to work the next day! I was oh.so.excited!
Ingredients:

1 package tempeh, crumbled

1/2 onion, diced

1 to 2 Tbsp olive oil

1 cup ketchup

1/2 cup water
-
1/4 cup apple cider vinegar

3 Tbsp light brown sugar

1 Tbsp sugar
-
1/2 tsp onion powder
-
1 tsp ground mustard
-
1/4 of lemon, juiced
-
1 tsp Worcestershire sauce
Directions:

Place all sauce ingredients – ketchup through Worcestershire sauce in saucepan and bring to a boil.

Once boiling, reduce and simmer for 45 minutes.

In saute pan, place crumbled tempeh and diced onion in olive oil and brown.

Once sauce is ready, pour into tempeh mixture – might not need all of sauce.

Cook 2 minutes or until heated throughout.

Stuff BBQ in pita pockets or buns and ENJOY!
