I decided to take two recipes I have made in the past: pastry dough and pesto and combine the two into a pizza dinner for us this week. For the dough recipe, check it out here and for the arugula pesto go here. From the original pesto recipe I used escarole but this time around I substituted arugula (1 cup) for escarole!
Arugula Pesto & Veggie Pizza Tart
Directions:

Make dough according to instructions above.

Brush arugula pesto, directions above, onto middle of crust and stop at folded edges – just like a pizza crust.

Layer with veggies and cheese.

Bake at 350F for 20 minutes or until lightly brown and crispy.
