I can’t believe how mini and cute these little sandwich cookies turned out. Not only do they look cute but they taste great! They are super simple and when I say that, I mean that. The recipe is actually quite similar to the breakfast pastry tart I made for my mom on Mother’s Day. The only difference is instead of using cold water, you use creamer. That means these cookies have a total of four simple ingredients. Yes, four! You most likely have all the ingredients on hand. So that means, get baking ladies and gents. PS if you don’t have a circular cookie cutter at home, a champagne glass will work just fine!
Pastry Cream Wafer Sandwiches

Ingredients:
Cookies

6 Tbsp butter, cold

1 cup all-purpose flour

3 to 4 Tbsp vanilla creamer (or light cream/half and half)
Icing
-
1/2 cup confectioners’ sugar
-
1 Tbsp plus 1 tsp vanilla creamer

sprinkles – optional
Directions:

Cut cold butter into flour in a medium-sized bowl with pastry blender or two knives.

Use hands to break down butter and create coarse meal.

Add creamer and mix well to create dough.

Flour surface, roll out dough until thin with rolling-pin.

Fold into fours and roll out again – incorporating butter into dough well.

Use circular cookie cutter or champagne glass to cut out cookies.

Bake on greased cookie sheet, 350F for 8 to 10 minutes.

Let cool, mix icing together adding 1 Tbsp creamer first to confectioners’ sugar – if needed add 1 tsp or more.

Spread icing on one side of cookie, place another on top.

Add dollop of icing on top of sandwich and pour sprinkles on to it.
