It is getting warmer out and I’m sure many of you will soon switch from oatmeal to something lighter – smoothies, yogurt, etc but if you haven’t done so already, I have a recipe for you! I like sweet potatoes because of their “sweet” side. Go figure. Mixing sweet potato into my oatmeal really made it naturally sweet. The only bad part about the recipe is having the time to bake the potato, which depending upon its’ size takes 30 to 45 minutes. After that, you are golden!
Ingredients

1/2 of a small sweet potato, baked

1/4 cup oats

1/2 cup almond milk

1 tsp flax seeds
-
1 Tbsp chopped almonds or nut of choice

sprinkle of brown sugar
Directions

Bake sweet potato until tender – 350F for 30 to 45 minutes

Peel skin and cut in half. Chop into small pieces

In sauce pan, place oats, sweet potato and milk on medium heat

Stir well to mix all ingredients

Cook until oats are softened – 3 minutes

Sprinkle with brown sugar
