Well I was in the mood for granola bars this past week and after looking at the ingredients of a natural bar, I figured it wasn’t hard to make. I have made granola bars, actually cups, before and they were really crunchy. This time, I wanted something more chewy and soft. I didn’t end up with bars because then I had an idea to make the granola bars into a cake and eat it for breakfast. I love eating something healthy in the morning that appears to be cake-like! You know how my sweet tooth always wins in the end. This is how the recipe went down…
Ingredients

1 cup oats

1/2 cup all-purpose flour

1/4 cup chopped pecans

1/4 cup golden flax seeds

1 tsp cinnamon

1/2 cup chopped dried apricots (or fruit of choice)

1/4 cup semi-sweet chocolate chips (optional)

2/3 to 3/4 cup natural apple sauce

1/3 to 1/2 cup honey

1/4 cup vegetable oil

1 tsp vanilla
Directions

Mix dry ingredients together, oats through chocolate chips.

Mix wet ingredients in another bowl.

Combine wet and dry together.

Spray 9″ cake pan generously with cooking spray.

Pat down mixture in pan, spreading evenly.

Bake 350F for 25 to 30 minutes.
