Cottage Cheese Pancakes

I have no idea why cottage cheese and pancakes came to mind, but I figured there had to be a recipe out there that would involve the two. I like cottage cheese and I like pancakes so I knew this recipe would be a hit. This was another “mission accomplished” recipe because Joe had no idea there was cottage cheese in them and he supposedly hates cottage cheese. He sure did love these though! Me too!

Cottage Cheese Pancakes

Adapted from Whole Foods

Ingredients:

  • 1/2 cup whole wheat flour (AP would also work)
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1 Tbsp agave
  • 1 egg white
  • 1/2 cup cottage cheese
  • 1/4 cup milk
  • 1 Tbsp oil

Directions:

  1. Whisk together all ingredients.
  2. Heat pan on medium heat and coat with cooking spray or olive oil.
  3. Pour batter into pan in increments and wait until bubbles appear (love this part).
  4. Flip and cook 1 to 2 more minutes.
  5. Top with your choice of goodies (I used peanut butter, strawberries and a sprinkle of brown sugar).
  6. ENJOY!!
