Someone at work made these enchiladas for us a few weeks ago and they were dynamite. I know a number of us at the bakery were trying to replicate his work and I think I did a pretty decent job! I like the sweet and salty combination of the beans and potatoes and what I was most impressed with was my ability to make enchilada sauce! The easy way would be to buy it at the store, but honestly…I had all the ingredients on hand and found it really easy to make using this recipe.
Ingredients:

2 large sweet potatoes, peeled and diced

4 corn tortillas (wheat would work)

1/2 can black beans, rinsed and drained

1/2 package Trader Joe’s vegetarian chorizo – optional

1 cup shredded cheese

1 cup enchilada sauce

Directions:

Boil sweet potatoes in medium size sauce pan until tender (15 minutes). Drain and mash with fork.

Brown half package of chorizo in olive oil (remove casing)

Lay 2 tortillas in bottom of cookie sheet or pan and fill with mashed potatoes, beans, chorizo and cheese.

Place other tortillas on top of these and spread sauce and cheese.

Bake 350F for 10 minutes or until cheese is melted.
