Lemon Donuts
Listen up ladies..these are baked donuts that taste fabulous, are vegan, and could be gluten free as well! Are you having a work meeting coming up where you could bring a dozen of these decadent donuts? Well, here’s the recipe for you!
Ingredients
Adapted from: Shape Magazine
Serving: 6 donuts

1 cup all-purpose flour (could use rice flour, will be gluten free)

1 cup almond meal (put almonds in food processor, chop up)

1 tsp baking powder

1/2 tsp salt

lemon zest
-
1/4 cup unsweetened apple sauce

1/4 cup vegetable oil
-
2/3 cup almond milk
-
1/2 lemon, juiced
-
1/2 tsp vanilla extract
Directions:

Mix flour, almond meal, baking powder and lemon zest together in bowl.

In another bowl, mix together rest of ingredients.

Pour dry ingredients into wet and combine well.

Pour in greased donut pan 2/3rd way full.

Bake 12 to 15 minutes at 350F.

Drizzle with powdered sugar glaze.
