Ingredients:

zucchini

pasta sauce

tofu (could use tempeh, ground beef)

mozzarella cheese
Directions:

Cut zucchini in half lengthwise. Scoop out flesh of zucchini.

Drizzle with olive oil, bake at 350F for 5 minutes to soften.

Meanwhile, cook tofu until browned on all sides in olive oil.

Mix tofu with pasta sauce.

Stuff zucchini with tofu mixture.

Sprinkle with cheese.

Bake for 15 minutes at 350F.
