Vegetable Shepard’s Pie
We used to eat Shepard’s Pie as a child and I could remember the love of the simple three ingredients together: ground beef, onions and potatoes with the occasionally added corn when my mom said it was ok. My mom doesn’t like corn in her Shepard’s Pie! Well I changed things up a bit, probably against mom’s order. I added corn for sure and a few other ingredients to vary from my mom’s pie.
Ingredients include: frozen corn, frozen peas, sautéed onions, pinto beans, and mashed potatoes topped with a sprinkle of cheese if you would like!
Directions: Layer ingredients as ordered above and bake for 20 minutes at 350F, covered. Last 5 minutes of baking, remove foil and turn up oven to 400F. ENJOY!
