basil infused lentils with mozzarella cheese

Last night’s dinner was pretty tasty! I will share what all went into it and you should definitely get on the lentil, basil olive oil, and mozzarella side dish for your dinner tonight. It was very simple and very tasty!

The plate is filled with many different things: corn, salad, falafel and a lentil side dish. I love grilled corn so much more than when it is boiled! I threw some left over grilled asparagus on top of the salad. There are two mini falafel cakes that I didn’t make, but these encouraged me to try to make them again. When I say again, I made falafel before and it just didn’t turn out right. The consistency of it didn’t allow for the cakes to be browned correctly. They just fell apart. The falafel that is pictured came from a package we actually bought at Sam’s Club and the ingredient list was short and sweet. There were no words I couldn’t pronounce and I enjoyed the flavor of them. Still, I would like to try round two of falafel making.

Lastly, the lentil side dish. How I made it:

Ingredient:

  • fresh basil
  • 1/4 c lentils
  • mozzarella cheese
  • olive oil

Directions:

  1. Boil the lentils and simmer for 15 to 20 minutes. Rinse when done and set aside.
  2. In a small food processor, blend together basil and olive oil. Create a basil infused olive oil. Don’t over blend. You should still be able to see bits of basil in the mix.
  3. Pour olive oil over lentils.
  4. Add chopped up cubes of mozzarella cheese.
  5. ENJOY!

Now get cooking folks! I’m off to workout with a friend of mine at her apartment complex gym. Then, its dress fitting time. Oh.so.excited.

Wednesday, how I love thee

Glad to hear the word Wednesday because I always think, half way through the week! Also, two days until the Finger Lakes and seeing two girls I haven’t seen in a few months! Yay!

Tonight I am trying on and doing the first fitting of my wedding dress. I am oh. so. excited. Just as excited as I am that it is Wednesday! I know I shouldn’t wish the days away, but when you have an important trip coming up, it is hard not to.

Onto breakfast… short, sweet, simple(S3):

I love cereal but sometimes find it difficult to have in the morning because I could eat an endless buffet of it and still have rumbling hunger pains you can hear from a mile away. I have noticed when I put lots of additives in the cereal, I am more likely to stay fuller longer. Makes sense. I added chopped pecans for protein, blueberries and mangos. If this doesn’t hold me over, my small grocery store of a lunch bag will come in handy at work today.

I am working at the bakery until early afternoon. Then, I plan on completing the end of our wedding stuff, working out, and finally going for my fitting.

As far as exercise goes, I hope I have a workout partner because these past few days my motivation level has not been there. I love workout buddies. Yesterday’s exercise included 25 minutes of jogging and sprinting on the treadmill, with intermittent breaks of walking as well as bursts of cardio activities.

Some examples:

  • jumping jacks
  • high knees
  • jump rope while crisscrossing feet
  • lateral hop from side to side on one leg
  • mountain climbers
  • climbing stairs
  • jump ups (bend down touch the floor then spring up with arms above head)
  • planks
  • forward/side kicks (kickboxer style)
