You know you are…when… (read Thursday)

Hope you waited to read this until Thursday! I actually wanted to share this with you over the weekend and plumb forgot. On the weekends, I love to eat ice cream. It’s official…I am obsessed with Dairy Queen’s vanilla ice cream cones with sprinkles. Believe me, I don’t think this is healthy by any means, but life is about livin’ and boy am I livin’ when I eat DQ cones.  Who doesn’t crave ice cream during the summer? Ice cream = summer.  So, happy summer to you! There is no picture to show you my monster cone because I devoured it in a few short seconds. To show you how I eat my tasty treat, watch the video clip below.

You know you are in love with ice cream and sprinkles when you find lost sprinkles inside your bra. You know you are in love with ice cream when your loved one says you look like this…

Video clip—> I am the owl in this video clip as Joe says. I take just a few licks, and BAM the ice cream cone is gone. Well mostly gone, with some remaining sprinkles I am saving for later wedged into my bra.

I am headed to the beach tonight but wanted to leave you with a dish I made for the trip. This doesn’t seem all that summer-ish of a meal, but it includes lots of veggies. So I figured it was a go…

Plus it feeds lots of people, so that was a plus as well. This is no noodle, veggie lasagna. In the mix, grilled eggplant, zucchini, and broccoli all smothered in garlic, ricotta cheese, sauce, parmesan cheese, mozzarella cheese, and a sprinkle of bread crumbs. All we need to do is place in the oven for 15 minutes or so and enjoy. There’s no meat or noodles (the sliced zucchini and eggplant act as the pasta). Joe, you are going to love this. Who said you had to have pasta to make lasagna? 

 

 

leftovers are my nemesis

I don’t know what it is about leftovers, but they drive me bonkers. I dislike eating the same thing two nights in a row. Blah! The problem is, I have no idea how to cook for just one night. We always have leftovers. ALWAYS. With that being said, as I was doing my university workout, I was thinking about lunch. That’s weird, working out and thinking of food? Only this girl. Here was my idea for the leftover tofu from last night:

I thought, “Go hey lil mama, I can transform ya.” If I am going to eat leftovers, I want them to be completely different from the night before. As Chris Brown says, “I can transform ya.” So I transformed the tofu from last night’s dinner into a scrambled egg & tofu sandwich. It was darn tasty!

All I did was chop up the tofu, whisk one egg and one egg white together, then throw the tofu into the egg mixture and cook! I added cheese as well as sliced tomato on top! Also check it out, there are three colors on the plate! Remember to make your plate full of colors because that means you are getting different nutrients from the different food!
